Blueberry Muffins

Preheat oven to 400 degrees F. Load muffin pan with 12 parchment muffin liners.

Make topping by combining the following with a fork to create a crumb texture:

  ¼ cup white sugar

  ¼ cup brown sugar

  ⅓ cup all-purpose flour

  ¼ cup butter, cubed

  2 teaspoons ground cinnamon

Combine these dry ingredients:

  1 ½ cups all-purpose flour

  ½ cup white sugar

  ¼ cup brown sugar

  1 teaspoon kosher salt

  2 teaspoons baking powder

Place the following into a 1 cup measuring cup:

  ⅓ cup vegetable oil

  1 egg

  Milk – add enough to fill to the 1 cup mark, apx. ⅓ cup.

Mix the two sets of ingredients together. And fold in:

  1 cup fresh blueberries

Place muffin mix into the liners and sprinkle with the topping.

Bake for 20-25 minutes or until done.
